Can a Kimchi-Derived Bacterium Help the Body Remove Nano plastics?

As people who work with Kimchi, we already know that fermentation does much more than create its sour taste and distinct flavor. During the process, different types of lactic acid bacteria naturally develop. Scientists are still learning how these microorganisms may interact not only with our digestive system, but also with substances that enter the body through food and water.

Recently, researchers at the World Institute of Kimchi studied a specific Kimchi-derived bacterium called Leuconostoc mesenteroides CBA3656. In laboratory testing, the strain was able to bind to polystyrene nanoplastics, extremely small plastic particles measuring less than one micrometer. It continued to bind to 57% of the particles in conditions designed to simulate the human intestine. In a study using germ-free mice, animals given the bacterium also excreted more than twice as many nanoplastics in their feces than the control group.

Now, this does not mean that eating a bowl of Kimchi will remove plastic from your body. The research focused on one specific bacterial strain and one type of nanoplastic, and the animal results still need to be confirmed in humans. Different Kimchi products can also contain different communities and amounts of beneficial bacteria. Still, the findings offer an interesting look at what food-derived microbes may be capable of.

Kimchi has been part of Korean meals for generations, long before people used terms like probiotics, microbiomes, or nanoplastics. Today, science is helping us better understand the complex changes that happen during fermentation. There is still much more to learn, but this research is another reminder that a traditional food can continue to surprise us in very modern ways.
